I this interview I chat with Simon Martin, from the Michelin Starred restaurant Mana in Manchester. The interview gives a really good insight into Simons philosophy and ethos. He is certainly one of Britain’s finest culinary stars and one that is only possibly just starting on his restaurant’s trajectory. It is going to be very interesting to see what he does over the next few years. I am certainly looking forward to visiting Manchester and eating his food. I think it will be exactly the type of food I love, I believe it will make me think, and not just consume, and at this level that is what I want.
